Easy Peasy Lemon Squeezy

Created by Veronica Holec

The perfect addition to kid’s lunch boxes, a solid work snack, a convenient post workout refuel or just a delicious guilt free sweet treat, protein balls have got you covered. The humble protein ball also known as bliss balls are a nutritiously dense combination of carbohydrates, protein and fats that will satisfy your sweet tooth, keep energy levels up and keep hunger pains at bay.

But not all protein balls are created equal. Many of the commercially mass-produced balls contain an array of starchy syrups to assist with binding, cheap fillers, as well as preservatives and additives that are unpronounceable. Making your own is not only super simple, but also incredibly addicting, the flavour combinations are endless and you are in control of the ingredients you put in.

This recipe is 100% raw natural and entirely plant based, vegan, no nasty fillers or sticky refined syrups, gluten, dairy, wheat, soy, egg & yeast free.

  • ¼ cup almonds
  • ¼ cup cashews
  • ¼ cup fine/shredded coconut
  • 20 medjool dates, pitted
  • 1 tsp. fresh lemon zest
  • 1 tbsp fresh lemon juice
  • Your desired amount of your favourite Probiotic Foods supplement powder
  • Extra coconut for rolling

Pulse nuts in the food processor making sure to retain some chunky pieces. Add lemon zest, juice, coconut, probiotics and about half the dates to the food processor and process until the mixture just starts to come together. If the mixture is too dry, add in dates one by one until the mixture is sticking together. Pinch off pieces of the mixture and roll into balls. Roll into extra coconut if desired.

Nutritionally yours,

Vee
