Gluten Free Banana Bread with Probiotics

Afternoon tea time! Fresh from our oven, refined sugar/dairy/gluten free banana bread. Everyone in the family will love this old favourite with a healthy twist, great for school box lunches, an in-between snack or anytime. We’ve included a teaspoon of Probiotics for Everyone as the super-culture of bacteria can withstand baking temperatures. Use organic ingredients where possible of course!

 

Ingredients

3 really ripe, mashed bananas
3 eggs
150g almond meal
¼ cup desiccated coconut
1 tbsp honey or rice malt syrup
1 tbsp coconut oil
1 tbsp chia seeds
1 tbsp fresh squeezed lemon juice
1 tsp of Probiotics for Everyone (or the blend you’re on!)
1 tsp maca powder (optional)
½ tsp cinnamon
½ tsp bicarb soda
¼ tsp vanilla bean paste
Walnuts for the top

 

Method

Preheat oven to 160ºC. Line a loaf tin with baking paper. Whisk banana, honey, coconut oil, cinnamon, vanilla, eggs, maca, bicarb and lemon juice. Add the almond meal, coconut and chia and mix well. Bake for 45-60 minutes, depending on your oven. Cake is done when a knife comes out clean. Serve with tea and besties. Yum!
